Discovery of New Fungal Compounds
Chinese researchers have found that natural compounds extracted from an edible mushroom species can enhance the perception of food saltiness by up to 70 percent, potentially helping to reduce the amount of salt added to foods while maintaining their taste.
Research Methodology and Results
The scientific website "Phys.org" reported on Wednesday that researchers from Gannan Medical University and the Fifth Clinical Medical College of Shanxi Medical University in China identified three peptides, which are short chains of amino acids, extracted from "Hypsizygus marmoreus" mushroom. Tests showed their ability to enhance salt perception when added to a saline solution.
Analysis and Computer Simulation
To reach these results, researchers used six different enzymes to break down mushroom proteins into smaller molecules, then analyzed thousands of peptides using laboratory techniques and computer tools. They selected five candidate compounds for testing, three of which showed effectiveness in enhancing salt perception. The duration of these compounds' effects ranged between 75 and 105 seconds, depending on the type of peptide used.
Computer simulations suggested that the peptides might interact with a protein known as "TMC4," which is linked to detecting salty taste. Tests further showed that using these compounds individually or in combination could increase the intensity and duration of salt perception.
Industrial and Food Applications
These findings open the door to developing natural food ingredients that enhance salty taste, potentially helping to lower sodium content in certain food products and providing the food industry with options to develop less salty foods without significantly affecting their taste.
